P.S...Thanks to my mom for some of her tomatoes and peppers, too! It was a joint effort. I might add that the next day Katie and I canned some grape jelly that was quite tasty, too. Just call me Susie Homemaker. Okay, don't really!

Salsa with the Skutleys
Who knew boiling, skinning, cutting and seeding could be so fun? Only if it's while making salsa with the Skutley family! They had a bumper crop of tomatoes in their garden this year and knew we'd be up for the challenge (aka Paul would be the brains behind the operation; I would merely lend a hand). Canning salsa is not for the weak... need to get the acidity just right, as you don't cook it again after canning it before you consume it. We worked in shifts while the combined 5 kids napped and at bedtimes, and the reward was a tasty, homemade creation that we plan to try again every summer! We ended up with nearly 30 pints. WOW! Talk about tasting the summer all winter long...


Ah, enjoying a brewskie while listening for the canner to whistle. I am sure they both dreamed of a night like this since they were wee boys...
